How To Make Vegan Mushroom Soup
Creamy and flavorful, this vegan mushroom soup is the perfect comfort food on a cold evening.

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lb mushrooms, sliced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic and sauté until onion is translucent.

Add mushrooms and cook until tender.

Add vegetable broth, coconut milk, thyme, salt, and pepper.

Bring to a boil, reduce heat and simmer for 20 minutes.
