If you have a lot of leftover corned beef from your St. Patrick’s Day celebration, then you can make this tender and tasty Reuben sandwich for breakfast!

For Thousand Island Dressing:

  • ½cupmayonnaise
  • ¼cupketchup
  • â…“cuppickle relishsweet
  • 1pinchsalt
  • 1pinchblack pepper

For Quick Sauerkraut:

  • 1cupcabbage
  • 2tbspapple cider vinegar
  • ½tspcaraway seedscrushed
  • ¼tspkosher salt

For Sandwich Ingredients:

  • 4pcshoagie rolls
  • 2tbspunsalted butter
  • 1lbcorned beef
  • 4swiss cheeseslices

Instructions

  1. Combine all the ingredients and let sit.

Quick Sauerkraut:

  1. Combine all the ingredients and let sit.

Sandwich:

  1. Cut the hoagie rolls in half and butter them.

  2. Toast the hoagie rolls.

  3. If desired broil the corned beef in the oven for 30-45 seconds.

  4. Spread thousand island dressing on both sides of the roll, then layer with corned beef slices, sauerkraut and Swiss cheese.
