How To Make Vegan Chilli

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 zucchini, diced
  • 1 cup corn kernels
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) tomato sauce
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.

  2. Add bell peppers, zucchini, and corn. Cook for 5 minutes, stirring occasionally.

  3. Stir in diced tomatoes, black beans, kidney beans, and tomato sauce.

  4. Add chili powder, cumin, paprika, salt, and pepper. Stir well to combine.

  5. Bring the chili to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.

  6. Serve hot with desired toppings such as avocado, cilantro, and lime wedges.
