How To Make Vegan Breakfast Muffins
These vegan breakfast muffins are a delicious and healthy way to start your day.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup ground flaxseed
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 cup almond milk
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup chopped fresh fruit (such as berries or apples)
- 1/2 cup chopped nuts (optional)
Instructions

Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the flour, oats, flaxseed, brown sugar, baking powder, baking soda, cinnamon, and salt.

In a separate bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped fruit and nuts, if using.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
