How To Make School Days Citrus Pudding

A refreshing and tangy pudding that is perfect for school days.

Serves:

Ingredients

  • 1 1/2 cups of milk
  • 1/4 cup of sugar
  • 1/4 cup of cornstarch
  • 1/4 teaspoon of salt
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 1 tablespoon of butter
  • Whipped cream, for serving (optional)
  • Fresh citrus slices, for garnish (optional)

Instructions

  1. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt.

  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.

  3. Remove the saucepan from the heat and stir in the lemon zest, lemon juice, orange zest, and orange juice.

  4. Return the saucepan to the heat and cook for an additional 2 minutes, stirring continuously.

  5. Remove the saucepan from the heat and stir in the butter until melted and incorporated.

  6. Pour the pudding into serving dishes and refrigerate for at least 2 hours, or until set.

  7. Serve the pudding chilled, topped with whipped cream and fresh citrus slices if desired.
