How To Make Ruby Tuesday Lobster Bisque Recipe

Serves:

Ingredients

  • 2 lobster tails, shelled and chopped
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 2 tbsp of butter
  • 1 medium sized onion, chopped finely
  • 2 garlic cloves, minced
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley leaves, chopped, for garnish

Instructions

  1. Melt butter in a pot over medium heat. Add onion and garlic and sauté until soft.

  2. Add the chopped lobster tails and bay leaf into the pot and cook for 5 minutes.

  3. Pour in chicken broth and heavy cream into the pot. Bring to a boil, reduce heat and simmer for 30 minutes.

  4. Remove bay leaf. Using a hand blender, purée the soup until smooth.

  5. Season with salt and pepper to taste.

  6. Ladle the lobster bisque into four bowls and garnish with parsley.
