How To Make Ruby Tuesday Baja Chicken Tacos

These tacos are packed with flavor and make for a perfect Mexican-inspired meal.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • salt and pepper, to taste
  • 1 tbsp olive oil
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • sour cream, for serving
  • lime wedges, for serving

Instructions

  1. In a small bowl, mix together the chili powder, cumin, paprika, salt, and pepper.

  2. Season the chicken strips with the spice mixture.

  3. Heat the olive oil in a large skillet over medium-high heat.

  4. Cook the chicken for 5-7 minutes, or until cooked through. Set aside.

  5. In a small bowl, mix together the shredded lettuce, diced tomatoes, and diced red onion.

  6. Assemble the tacos by adding the chicken, lettuce mixture, and shredded cheese to each tortilla.

  7. Serve with a dollop of sour cream and a wedge of lime.
