How To Make Mexican Rice
A flavorful and aromatic rice dish with a hint of spice.

Ingredients
- 1 cup long-grain white rice
- 1 tbsp vegetable oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 red bell pepper, diced
- 1 cup diced tomatoes
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 2 cups chicken or vegetable broth
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the vegetable oil over medium heat.

Add the onion, garlic, and red bell pepper. Sauté until softened.

Add the rice to the skillet and cook, stirring frequently, until lightly toasted.

Stir in the diced tomatoes, chili powder, cumin, paprika, and salt.

Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked through.

Fluff the rice with a fork and garnish with fresh cilantro before serving.
