Ingredients

  • 2 tbsp olive oil
  • 1 lb Italian sausage links
  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add sausage links and cook until browned on all sides, about 8 minutes.

  3. Remove sausage from pan and set aside.

  4. In the same pan, add peppers, onions, garlic, salt, and pepper. Cook for about 5-8 minutes until vegetables are tender and lightly caramelized.

  5. Slice sausage and add back into the pan. Stir everything together and cook for an additional 2-3 minutes, until sausage is heated through.

  6. Garnish with fresh parsley and serve.
