  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1 tsp ginger powder
  • 1 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1/4 tsp clove powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F.

  2. In a mixing bowl, whisk together the almond flour, coconut flour, erythritol, ginger powder, cinnamon powder, nutmeg powder, clove powder, and salt.

  3. Add the softened butter and mix until mixture resembles coarse crumbs.

  4. Add the egg and vanilla extract, then mix until well combined.

  5. Roll the dough into small balls and place them on a baking sheet.

  6. Flatten each ball of dough with the back of a fork.

  7. Bake for 10-12 minutes or until edges are golden brown.

  8. Allow the cookies to cool before serving.
