Delicious and healthy chicken skewers, perfect for a low carb meal or snack.

Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into small chunks
- 1 red bell pepper, cut into small chunks
- 1 green bell pepper, cut into small chunks
- 1 yellow onion, cut into small chunks
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions

Preheat grill or grill pan to medium high heat.

In a large bowl, whisk together olive oil, lemon juice, garlic powder, onion powder, oregano, salt and pepper.

Add chicken chunks to the bowl and toss until thoroughly coated.

Thread chicken, bell peppers, and onion onto skewers, alternating between chicken and vegetables.

Grill skewers for 12-15 minutes, turning occasionally, until chicken is cooked through and vegetables are slightly charred.
