How To Make Lentil Soup Recipe

A hearty and comforting soup made with lentils, vegetables and warm spices.

Serves:

Ingredients

  • 1 cup of dried lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tsp of cumin
  • 1 tsp of smoked paprika
  • ½ tsp of turmeric
  • 4 cups of vegetable broth
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery and garlic. Cook for about 5 minutes until softened.

  2. Add the cumin, smoked paprika and turmeric. Stir well.

  3. Add the vegetable broth and lentils. Bring to a boil and reduce the heat to low. Simmer for about 20-25 minutes until the lentils are tender.

  4. Adjust the seasoning with salt and pepper to taste.

  5. Serve the soup hot with fresh herbs and crusty bread.
