How To Make Carrot Ginger Soup
Creamy and comforting soup made with carrots, ginger, and a touch of cream.
Serves:
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- salt and pepper to taste
- 1/4 cup heavy cream
Instructions

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for another minute.

Add the chopped carrots and vegetable broth, and bring to a boil.

Reduce heat to low and simmer until the carrots are tender, about 15 minutes.

Using an immersion blender, puree the soup until smooth.

Stir in the heavy cream and season with salt and pepper to taste.
