Crispy tacos filled with seasoned shrimp, topped with fresh veggies, and drizzled with a zesty sauce.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
  • 8 small corn tortillas
  • 1 1/2 cups shredded lettuce
  • 1 tomato, diced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • for the sauce:
  • 1/4 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh cilantro
  • salt and pepper, to taste

Instructions

  1. In a bowl, mix together olive oil, cumin, chili powder, garlic powder, salt, and pepper. Add shrimp and toss to coat.

  2. Heat a large skillet over medium-high heat. Add shrimp and cook for 3-4 minutes on each side, or until cooked through and crispy.

  3. In a small bowl, whisk together sour cream, mayonnaise, lime juice, chopped cilantro, salt, and pepper. Set aside.

  4. Warm tortillas in a dry skillet over medium heat for about 30 seconds on each side. Fill each tortilla with shrimp, lettuce, tomato, red onion, and cilantro. Drizzle with sauce and serve with lime wedges.
