Total: 25 minutes

Serves:

Ingredients

  • 4 slices of bread
  • 4 slices of cooked bacon
  • 4 large eggs
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Toast the bread slices until golden brown.

  4. Spread the avocado slices onto the toasted bread slices.

  5. Top each slice with a cooked egg, bacon, cherry tomatoes, red onion, and shredded cheddar cheese.

  6. Season with salt and pepper to taste.

  7. Place the sandwiches on a baking sheet and broil until the cheese is melted and bubbly.

  8. Garnish with fresh parsley. Serve hot.
