How To Make Keto Ground Beef and Eggplant Lasagna Recipe
A delicious, low-carb lasagna made with layers of eggplant and seasoned ground beef.

Ingredients
- 1 large eggplant, sliced into rounds
- 1 lb. ground beef
- 1/2 cup onion, chopped
- 3 cloves garlic, minced
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1/2 tsp. red pepper flakes (optional)
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions

Preheat the oven to 375 degrees F.

In a large skillet, brown the ground beef with onion and garlic over medium heat, until fully cooked. Add oregano, basil, red pepper flakes (if using), salt and pepper.

Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.

Layer eggplant slices on top of the sauce in a single layer.

Spoon half of the beef mixture over the eggplant, spreading it evenly.

Spread half of the ricotta cheese over the beef mixture, then sprinkle with half of the parmesan cheese.

Repeat layers with remaining eggplant, beef mixture, ricotta cheese and parmesan cheese.

Cover with foil and bake for 30 minutes. Remove foil and bake for additional 20 minutes, or until cheese is bubbly and golden brown.

Let it cool for 5-10 minutes before serving.
