Ingredients

  • 250g chicken livers, trimmed and cleaned
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp butter
  • 2 tbsp port wine
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a frying pan, melt the butter over medium heat. Add the chopped onion and minced garlic and sauté until translucent.

  2. Add the chicken livers to the pan and cook for about 10 minutes, until they are browned on the outside but still slightly pink on the inside.

  3. Remove the pan from the heat and let the mixture cool slightly.

  4. Transfer the mixture to a blender or food processor and add the port wine, dried thyme, salt, and pepper. Blend until smooth and creamy.

  5. Taste and adjust the seasoning if needed.

  6. Transfer the pâté to a serving dish or individual ramekins and refrigerate for at least 2 hours to allow the flavors to meld together.

  7. Serve with toast or crackers.
