Ingredients

  • 8 oz. gluten-free spaghetti
  • 2 tbsp. vegetable oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 3 green onions, thinly sliced
  • 1/4 cup gluten-free soy sauce
  • 2 tbsp. creamy peanut butter
  • 2 tbsp. rice vinegar
  • 1 tbsp. honey
  • 1/2 tsp. red pepper flakes
  • 1/4 cup roasted peanuts, chopped
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Cook spaghetti according to package instructions and set aside.
  2. In a large skillet, heat oil over medium-high heat. Add garlic and sauté for 30 seconds.
  3. Add red bell pepper and green onions, and cook until vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, peanut butter, rice vinegar, honey, and red pepper flakes.
  5. Add spaghetti and sauce to skillet and toss to combine.
  6. Serve with chopped peanuts and cilantro on top.
