How To Make Gluten-Free Thai Curry Recipe

Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup green beans, trimmed
- 1 cup mushrooms, sliced
- 1 can coconut milk
- 2-3 tbsp Thai red curry paste
- Salt and pepper, to taste
- Cilantro, for garnish
- Rice or rice noodles, for serving
Instructions

Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; cook until softened.

Add bell peppers, green beans, and mushrooms; cook for a few minutes until slightly softened.

Stir in coconut milk and curry paste, then season with salt and pepper.

Cover and simmer for 20-25 minutes, until vegetables are cooked through and the sauce has thickened.
