Ingredients

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup green beans, trimmed
  • 1 cup mushrooms, sliced
  • 1 can coconut milk
  • 2-3 tbsp Thai red curry paste
  • Salt and pepper, to taste
  • Cilantro, for garnish
  • Rice or rice noodles, for serving

Instructions

  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; cook until softened.

  2. Add bell peppers, green beans, and mushrooms; cook for a few minutes until slightly softened.

  3. Stir in coconut milk and curry paste, then season with salt and pepper.

  4. Cover and simmer for 20-25 minutes, until vegetables are cooked through and the sauce has thickened.

  5. Serve over rice or rice noodles, garnished with cilantro.
