Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups sliced bell peppers
  • 1 cup sliced onion
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth

Instructions

  1. In a large skillet or wok, heat olive oil over medium-high heat.

  2. Add chicken and cook for 5-7 minutes, until no longer pink.

  3. Add garlic powder, ginger, salt, and black pepper and stir to combine.

  4. Add broccoli, bell peppers, and onion to the skillet and cook for an additional 5-7 minutes, until vegetables are tender but still slightly crunchy.

  5. In a small bowl, whisk together soy sauce, cornstarch, and chicken broth until smooth.

  6. Pour sauce over chicken and vegetable mixture and stir to coat.

  7. Cook for an additional 2-3 minutes, until sauce has thickened and ingredients are fully combined.

  8. Serve hot over rice.
