Ingredients
- 1 cup gluten-free flour
- 1/4 cup powdered sugar
- 1/4 cup coconut oil
- 2 lemons, zested and juiced
- 2 eggs
- 1/2 cup granulated sugar
- 1/4 tsp baking powder
Instructions

Preheat oven to 350°F and line an 8×8 inch baking dish with parchment paper.

In a mixing bowl, combine gluten-free flour and powdered sugar. Add in coconut oil and mix until crumbly.

Press mixture into the bottom of the prepared baking dish and bake for 15-20 minutes or until golden.

In a separate mixing bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.

Pour mixture over the baked crust and return to the oven for an additional 15-20 minutes or until the filling is set.

Remove from oven and let it cool completely.

Dust powdered sugar on top of the bars before serving.
