  • 12 oz gluten-free pasta
  • 1 tbsp olive oil
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, trimmed and cut into 2-inch pieces
  • 1 cup bell pepper, diced
  • 1/2 cup green peas
  • 1/4 cup fresh lemon juice
  • 1/4 cup vegetable broth
  • 1 tbsp lemon zest
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions and set aside.

  2. Meanwhile, heat olive oil in a large skillet over medium heat.

  3. Add shallot and garlic and sauté until soft and fragrant, about 2 minutes.

  4. Add cherry tomatoes, asparagus, bell pepper, and green peas; sauté for 5-7 minutes until tender.

  5. In a small bowl, whisk together lemon juice, vegetable broth, lemon zest, dried thyme, salt, and pepper.

  6. Add cooked pasta and sauce to the vegetable skillet and toss until coated.

  7. Garnish with fresh parsley and serve.
