How To Make Damson Jam
A sweet and tangy jam made from fresh damson plums.
Serves:
Ingredients
- 1 kg damson plums
- 500g granulated sugar
- Juice of 1 lemon
Instructions

Wash the damson plums and remove any stems. Cut them in half and remove the stones.

Place the damson plums in a large saucepan and add the sugar and lemon juice.

Cook over medium heat, stirring occasionally, until the fruit softens and releases its juices. This will take about 15 minutes.

Once the fruit is soft, increase the heat to high and bring the mixture to a rapid boil. Stir constantly to prevent sticking.

Boil the mixture for about 45 minutes, or until it thickens and reaches the desired consistency. To test if the jam is ready, place a small amount on a chilled plate and let it cool. It should set and wrinkle when touched.

Once the jam is ready, remove from heat and let it cool slightly. Skim off any foam that may have formed on top.

Carefully transfer the jam into sterilized jars and seal tightly.

Allow the jam to cool completely before storing in a cool, dark place. It will keep for up to 1 year.
