Ingredients

  • 1 lb pollock fillets, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beer
  • Vegetable oil, for frying

Instructions

  1. Preheat vegetable oil in a large pot or deep fryer to 375°F (190°C).

  2. In a bowl, whisk together the flour, baking powder, salt, and black pepper.

  3. Slowly pour in the beer while whisking until a smooth batter forms.

  4. Dip the pollock pieces into the batter, allowing any excess batter to drip off.

  5. Fry the battered pollock in the preheated oil for about 4-5 minutes, or until golden brown and crispy.

  6. Remove the fried pollock bites from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

  7. Serve hot with tartar sauce or your favorite dipping sauce.
