How To Make Pineapple & Chilli Glazed Gammon

Ingredients

  • 1.5 kg gammon joint
  • 200g pineapple chunks (canned)
  • 2 red chillies, chopped
  • 4 tbsp honey
  • 2 tbsp soy sauce
  • 2 cloves of garlic, minced

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Place the gammon joint in a roasting tin and cover with foil.

  3. Cook in the preheated oven for 1.5 hours.

  4. Meanwhile, blend the pineapple chunks, red chillies, honey, soy sauce, and garlic until smooth.

  5. After 1.5 hours, remove the foil from the gammon and pour the glaze over the joint.

  6. Return to the oven and cook for a further 30 minutes, or until the gammon is cooked through.

  7. Baste the gammon with the glaze every 10 minutes during the last 30 minutes of cooking.

  8. Once cooked, remove from the oven and let it rest for 10 minutes before carving.

  9. Serve the gammon slices with the remaining glaze on the side. Enjoy!
