  • 1 cup tamarind pulp
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup sugar
  • 1/4 tsp salt

Instructions

  1. In a small saucepan, combine tamarind pulp and 1 cup of water. Bring to a boil and let cool slightly.

  2. Strain the tamarind mixture through a fine-mesh sieve, pressing down on it with a spatula to extract all the liquid.

  3. In a mixing bowl, whisk together the tamarind liquid, coconut milk, sugar and salt until the sugar is dissolved.

  4. Pour the mixture into popsicle molds and freeze for at least 6 hours or until firm.
