Ingredients

  • 8-10 sardines, cleaned and gutted
  • 1 cup vinegar
  • 1/2 cup water
  • 1 onion, sliced
  • 1 tsp peppercorns
  • 1 tsp whole allspice
  • 3 bay leaves
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 1/4 cup olive oil

Instructions

  1. In a medium saucepan, mix together the vinegar, water, onion, peppercorns, allspice, bay leaves, salt, sugar, and garlic.

  2. Bring the mixture to a boil, then lower the heat and let it simmer for 5 minutes.

  3. Add the sardines to the pot and cook for 10-12 minutes depending on the size of the fish.

  4. Once the fish is cooked, arrange them in a single layer in a shallow dish or bowl.

  5. Pour the remaining sauce over the sardines and drizzle with olive oil.

  6. Cover and chill in the refrigerator for a few hours or overnight before serving.
