  • 8 oz spaghetti
  • 6 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a large mixing bowl, whisk the eggs until well beaten. Add the Parmesan cheese, parsley, salt, and black pepper. Mix well.

  3. Heat olive oil in a non-stick skillet over medium-high heat. Add the cooked spaghetti and sauté for 2-3 minutes, until heated through.

  4. Reduce the heat to medium and pour the egg mixture over the spaghetti. Let it cook for about 2 minutes, until the edges start to set.

  5. Carefully flip the omelette using a spatula and cook for another 2-3 minutes, until cooked through and slightly golden.

  6. Transfer the omelette to a serving plate and cut into wedges. Serve hot.
