Ingredients

  • 4 catfish fillets
  • 1 cup of cornmeal
  • 1/2 cup of all-purpose flour
  • 1 tbsp of baking powder
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 1 egg
  • 1/2 cup of milk
  • 1/4 cup of vegetable oil

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, mix together cornmeal, flour, baking powder, salt, and black pepper.

  3. In a separate bowl, beat together egg and milk.

  4. Dip catfish fillets in the egg mixture, then coat in the cornmeal mixture.

  5. Heat vegetable oil in a skillet over medium-high heat. Add catfish fillets and cook for 3-4 minutes on each side, or until golden brown.

  6. Transfer catfish fillets to a baking sheet and bake in the oven for 10-12 minutes, or until fully cooked.

  7. Serve with cornbread.
