How To Make Anchovy and Roasted Garlic Aioli Recipe
Creamy and flavorful aioli with the perfect balance of anchovy and roasted garlic.
Serves:
Ingredients
- 1 head of garlic
- 1/4 tsp salt
- 2 egg yolks
- 1 tbsp Dijon mustard
- 2 tsp lemon juice
- 1/4 cup olive oil
- 1/4 cup vegetable oil
- 4 anchovy fillets, finely chopped
- 1/8 tsp black pepper
Instructions

Preheat oven to 375°F.

Cut off top of garlic head. Drizzle with olive oil and sprinkle with salt. Roast in oven for 25 minutes.

Remove garlic from oven and let cool. Squeeze out roasted garlic cloves into a bowl.

Add egg yolks, Dijon mustard, and lemon juice to roasted garlic. Whisk until combined.

Slowly pour olive and vegetable oil into mixture while whisking continuously until aioli is thick and creamy.

Add finely chopped anchovy fillets and black pepper. Mix until well incorporated.

Refrigerate aioli until ready to serve.
