Ingredients

  • 4 slices of crusty bread
  • 3 tbsp of olive oil
  • 2 garlic cloves, minced
  • 4-6 anchovy fillets, chopped
  • 2 ripe tomatoes, diced
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, chopped

Instructions

  1. Preheat the grill or a grill pan to medium-high heat.

  2. Brush the bread slices with olive oil and grill each side until golden and crispy.

  3. In a small bowl, mix together the garlic, anchovy fillets, and diced tomatoes.

  4. Season the tomato mixture with salt and pepper to taste.

  5. Spoon the tomato mixture over the grilled bread slices and sprinkle with chopped basil.

  6. Serve immediately.
