Serves:
Ingredients
- 4 egg yolks
- 1/4 cup sugar
- 1/4 cup sweet Marsala wine
- 1/2 cup heavy cream
- 8 sponge finger biscuits
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- Fresh mint leaves, for garnish
Instructions
-
In a heatproof bowl, whisk together the egg yolks, sugar, and Marsala wine. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water.
-
Whisk the mixture continuously until it thickens and becomes pale yellow in color, about 5-7 minutes. Remove from heat and let it cool completely.
-
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled zabaglione mixture.
-
Dip the sponge finger biscuits into the Marsala wine and layer them on the bottom of a serving dish.
-
Spoon half of the zabaglione cream over the sponge finger biscuits, spreading it evenly.
-
Top with half of the mixed berries, then repeat the layers with the remaining biscuits, zabaglione cream, and berries.
-
Garnish with fresh mint leaves and refrigerate for at least 2 hours before serving.
-
Slice and enjoy!
