Preparation: 20 minutes
Cooking: 10 minutes
Total: 30 minutes

Serves:

Ingredients

  • 4 egg yolks
  • 1/4 cup sugar
  • 1/4 cup sweet Marsala wine
  • 1/2 cup heavy cream
  • 8 sponge finger biscuits
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves, for garnish

Instructions

  1. In a heatproof bowl, whisk together the egg yolks, sugar, and Marsala wine. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water.

  2. Whisk the mixture continuously until it thickens and becomes pale yellow in color, about 5-7 minutes. Remove from heat and let it cool completely.

  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled zabaglione mixture.

  4. Dip the sponge finger biscuits into the Marsala wine and layer them on the bottom of a serving dish.

  5. Spoon half of the zabaglione cream over the sponge finger biscuits, spreading it evenly.

  6. Top with half of the mixed berries, then repeat the layers with the remaining biscuits, zabaglione cream, and berries.

  7. Garnish with fresh mint leaves and refrigerate for at least 2 hours before serving.

  8. Slice and enjoy!
