Serves:
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 pound fresh strawberries, hulled and sliced
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Whipped cream, for serving (optional)
- Mint leaves, for garnish (optional)
Instructions
-
In a food processor, pulse the flour, butter, granulated sugar, and salt until the mixture resembles coarse crumbs.
-
Add 2-3 tablespoons of cold water and pulse until the dough comes together. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 15 minutes.
-
Preheat the oven to 375°F (190°C).
-
On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut out 4-inch circles and place them into individual tart pans. Press the dough into the pans and trim off any excess.
-
Place the tart pans on a baking sheet and bake for 12-15 minutes, until golden brown. Allow them to cool completely.
-
In a bowl, combine the sliced strawberries, powdered sugar, and vanilla extract. Toss gently to coat the strawberries.
-
Spoon the strawberry mixture into the cooled tart shells. Refrigerate for at least 30 minutes to allow the flavors to meld.
-
Serve the strawberry tarts with a dollop of whipped cream and garnish with mint leaves, if desired.
