  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 tablespoons ice water
  • 2 cups fresh strawberries, sliced
  • 2 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • powdered sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, whisk together the flour, sugar, and salt.

  3. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  4. Gradually add the ice water and mix until the dough comes together. Shape the dough into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

  5. In a separate bowl, combine the sliced strawberries, cornstarch, granulated sugar, and lemon juice. Toss until the strawberries are coated.

  6. On a lightly floured surface, roll out the chilled dough into a circle, about ¼ inch thick.

  7. Transfer the rolled-out dough to a baking sheet lined with parchment paper.

  8. Spoon the strawberry mixture onto the center of the dough, leaving about 2 inches of dough around the edges.

  9. Fold the edges of the dough up and over the strawberries, pleating as necessary.

  10. Brush the edges of the dough with the beaten egg wash.

  11. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the strawberries are bubbling.

  12. Remove from the oven and let cool for 10 minutes. Dust with powdered sugar before serving.
