How To Make Vanilla Bean and Coconut Rice Pudding Recipe

Creamy rice pudding infused with the flavors of vanilla bean and coconut.

Ingredients

  • 1 cup of Arborio rice
  • 2 cups of coconut milk
  • 1 cup of water
  • 1 vanilla bean pod, split and scraped
  • 1/4 tsp of salt
  • 1/3 cup of granulated sugar
  • 1/4 cup of unsweetened shredded coconut

Instructions

  1. In a medium saucepan, combine the Arborio rice, coconut milk, water, vanilla bean seeds and pod, and salt.

  2. Bring the mixture to a boil, then turn down the heat and let it simmer for about 30-35 minutes, stirring frequently, until the rice is cooked and the mixture has thickened.

  3. Stir in the sugar and shredded coconut, and let the mixture cook for another 5-10 minutes.

  4. Remove the vanilla bean pod and divide the pudding into four bowls.

  5. Chill in the fridge for at least 1 hour before serving.
