How To Make Vanilla Bean and Coconut Rice Pudding Recipe
Creamy rice pudding infused with the flavors of vanilla bean and coconut.
Serves:
Ingredients
- 1 cup of Arborio rice
- 2 cups of coconut milk
- 1 cup of water
- 1 vanilla bean pod, split and scraped
- 1/4 tsp of salt
- 1/3 cup of granulated sugar
- 1/4 cup of unsweetened shredded coconut
Instructions

In a medium saucepan, combine the Arborio rice, coconut milk, water, vanilla bean seeds and pod, and salt.

Bring the mixture to a boil, then turn down the heat and let it simmer for about 30-35 minutes, stirring frequently, until the rice is cooked and the mixture has thickened.

Stir in the sugar and shredded coconut, and let the mixture cook for another 5-10 minutes.

Remove the vanilla bean pod and divide the pudding into four bowls.

Chill in the fridge for at least 1 hour before serving.
