Chicken & Leek Filo Pie Recipe

How To Make Chicken & Leek Filo Pie

A delicious and savory pie filled with tender chicken and leeks, encased in flaky filo pastry.

Serves:

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 2 leeks, washed and thinly sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 6 sheets of filo pastry
  • 2 tbsp melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large pan, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.

  3. Add the sliced leeks and cook for another 5 minutes, until they start to soften.

  4. Add the shredded chicken, dried thyme, salt, and pepper. Stir well to combine and cook for another 2 minutes.

  5. Remove the pan from heat and set aside.

  6. Take one sheet of filo pastry and brush it with melted butter. Lay another sheet on top and brush with butter again.

  7. Repeat this process until you have used all the filo sheets.

  8. Spoon the chicken and leek mixture onto one end of the filo pastry. Roll the pastry tightly to form a log shape, tucking in the edges as you go.

  9. Place the filo log onto a baking sheet lined with parchment paper, seam side down.

  10. Brush the top of the filo log with melted butter.

  11. Bake in the preheated oven for 25-30 minutes, or until the filo is golden brown and crispy.

  12. Remove from the oven and let it cool for a few minutes before serving.
