Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten
  • 1 tbsp water

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a mixing bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, cloves, ginger, and salt. Mix well.

  3. Roll out the pie crusts on a lightly floured surface.

  4. Using a round cookie cutter or a glass, cut out circles from the pie crusts.

  5. Place a spoonful of the pumpkin mixture onto one half of each circle.

  6. Fold the other half of the circle over the filling and press the edges with a fork to seal.

  7. Place the empanadas onto a baking sheet lined with parchment paper.

  8. In a small bowl, whisk together the beaten egg and water. Brush the tops of the empanadas with the egg wash.

  9. Bake in the preheated oven for 20-25 minutes, or until golden brown.

  10. Allow the empanadas to cool slightly before serving.
