How To Make Pumpkin Empanadas

Ingredients
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp ginger
- 1/4 tsp salt
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten
- 1 tbsp water
Instructions

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, cloves, ginger, and salt. Mix well.

Roll out the pie crusts on a lightly floured surface.

Using a round cookie cutter or a glass, cut out circles from the pie crusts.

Place a spoonful of the pumpkin mixture onto one half of each circle.

Fold the other half of the circle over the filling and press the edges with a fork to seal.

Place the empanadas onto a baking sheet lined with parchment paper.

In a small bowl, whisk together the beaten egg and water. Brush the tops of the empanadas with the egg wash.

Bake in the preheated oven for 20-25 minutes, or until golden brown.

Allow the empanadas to cool slightly before serving.
