Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 bell pepper, diced
  • 1/2 cup frozen corn
  • 1/4 cup chopped olives
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 sheets pre-made pie crust
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, sauté the onions, garlic, and bell pepper until softened.

  3. Add the shredded chicken, corn, olives, cumin, paprika, chili powder, salt, and pepper. Cook for another 5 minutes, stirring frequently.

  4. Roll out the pie crust and cut out circles using a biscuit cutter or a glass.

  5. Spoon a generous amount of the chicken filling onto each dough circle, leaving a small border around the edges.

  6. Fold the dough in half to form a half-moon shape and pinch the edges to seal.

  7. Place the empanadas onto a baking sheet lined with parchment paper.

  8. Brush the tops with beaten egg to give them a golden color.

  9. Bake for 15-20 minutes, or until the empanadas are golden brown and crispy.

  10. Serve hot and enjoy!
