Serves:
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/4 cup cold water
- 1/4 cup vegetable oil
- 1/2 lb ground beef
- 1/2 onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- Oil, for frying
Instructions
-
In a bowl, combine flour and salt. Add water and vegetable oil. Mix until it forms a dough. Knead for a few minutes until smooth. Cover with plastic wrap and let it rest for 30 minutes.
-
In a skillet, cook ground beef until browned. Add onion, bell pepper, garlic, cumin, paprika, salt, and pepper. Cook until vegetables are softened. Remove from heat and let it cool.
-
Roll out the dough into a thin circle. Cut out circles using a round cutter or a glass.
-
Spoon a tablespoon of the meat mixture onto one half of each dough circle. Fold the other half over the filling to make a half-moon shape. Press the edges with a fork to seal.
-
Heat oil in a deep pan or skillet. Fry the empanadas in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
-
Serve hot and enjoy!
