Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup muscat wine
  • 1/2 cup gooseberry jam
  • 1/4 cup mascarpone cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a small bowl, whisk together the flour and baking powder. Set aside.

  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.

  4. Add the eggs one at a time, beating well after each addition. Stir in the muscat wine.

  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.

  6. Pour half of the batter into the prepared cake pan. Spread the gooseberry jam evenly over the batter.

  7. Pour the remaining batter over the jam, using a spoon to spread it evenly.

  8. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and allow to cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.

  10. Once cooled, spread the mascarpone cheese over the top of the cake. Serve and enjoy!
