Ingredients

  • 1 cup gooseberries, trimmed and halved
  • 1/4 cup fresh mint leaves
  • 1/2 cup lemon juice
  • 1/4 cup honey or sugar (adjust according to taste)
  • 4 cups cold water
  • Ice cubes, for serving
  • Mint sprigs, for garnish

Instructions

  1. In a blender, combine the gooseberries, mint leaves, lemon juice, and honey/sugar. Blend until smooth.

  2. Strain the mixture through a fine mesh sieve to remove any solids.

  3. In a pitcher, combine the gooseberry-mint mixture and cold water. Stir well.

  4. Serve the gooseberry & mint lemonade over ice cubes in individual glasses.

  5. Garnish with mint sprigs and enjoy!
