Ingredients
- 1 cup gooseberries, trimmed and halved
- 1/4 cup fresh mint leaves
- 1/2 cup lemon juice
- 1/4 cup honey or sugar (adjust according to taste)
- 4 cups cold water
- Ice cubes, for serving
- Mint sprigs, for garnish
Instructions

In a blender, combine the gooseberries, mint leaves, lemon juice, and honey/sugar. Blend until smooth.

Strain the mixture through a fine mesh sieve to remove any solids.

In a pitcher, combine the gooseberry-mint mixture and cold water. Stir well.

Serve the gooseberry & mint lemonade over ice cubes in individual glasses.

Garnish with mint sprigs and enjoy!
