  • 2 cups all-purpose flour
  • 1 tsp baking powder

  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup mixed summer fruits (such as blueberries, strawberries, and peaches)
  • For the crumble topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

  3. In a separate bowl, mix together the melted butter, buttermilk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Gently fold in the mixed summer fruits.

  5. In a small bowl, combine the flour, rolled oats, brown sugar, and cold butter cubes for the crumble topping. Use your fingers or a fork to mix until crumbly.

  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle the crumble topping evenly over the batter.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.
