  • 1 cup oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, combine the oats, flour, brown sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Gently fold in the blueberries.

  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool for a few minutes before removing from the tin.

  9. Serve warm and enjoy!
