Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup orange marmalade

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, and eggs.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Fill each muffin cup halfway with the batter.

  6. Add a spoonful of orange marmalade to each muffin cup.

  7. Top with more batter until the muffin cups are three-quarters full.

  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the muffins to cool for a few minutes before removing them from the tin.
