How To Make Watermelon Doughnuts

- 1 small watermelon, seedless
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup milk
- 1 tsp vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting

Cut the watermelon into thick round slices, about 1-inch thick. Use a round cookie cutter to cut out doughnut shapes from the watermelon slices. Set aside.

In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate small bowl, mix together the milk and vanilla extract. Gradually add the milk mixture to the flour mixture, stirring until a smooth batter forms.

In a large deep pot, heat vegetable oil to 375°F (190°C). Carefully lower the watermelon doughnuts into the hot oil, frying for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to transfer the doughnuts to a paper towel-lined plate to drain any excess oil.
