  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin.

  2. In a large bowl, combine the grated zucchini, applesauce, maple syrup, melted coconut oil, and vanilla extract.

  3. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
