  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

  3. In another bowl, whisk together the brown sugar, vegetable oil, applesauce, eggs, and vanilla extract until well combined.

  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated carrots.

  5. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
