  • 1 cup all-purpose flour

  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 medium apple, peeled and diced
  • 1/4 cup chopped pecans

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

  3. In a separate bowl, combine the milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Gently fold in the diced apple.

  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

  6. Sprinkle the chopped pecans over the top of each muffin.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
