  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp gelatin
  • 2 tbsp cold water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh strawberries, for garnish

Instructions

  1. In a blender, puree the strawberries, granulated sugar, and lemon juice until smooth.

  2. In a small bowl, sprinkle the gelatin over the cold water. Let it sit for 5 minutes to bloom.

  3. In a saucepan, heat the gelatin mixture over low heat until dissolved. Remove from heat and let it cool slightly.

  4. In a mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.

  5. Gradually pour in the gelatin mixture while continuing to beat the cream until stiff peaks form.

  6. Fold in the strawberry puree gently until well combined.

  7. Divide the mousse among serving glasses or bowls.

  8. Refrigerate for at least 2 hours or until set.

  9. Garnish with fresh strawberries before serving.
