Ingredients

  • 1 ½ cups fresh strawberries, hulled and chopped
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 6 ounces semi-sweet chocolate, melted
  • 1 ½ cups chocolate cake crumbs
  • Fresh strawberries, for garnish
  • Whipped cream, for garnish

Instructions

  1. In a blender or food processor, puree the strawberries, granulated sugar, and lemon juice until smooth.

  2. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.

  3. Heat the strawberry puree in a saucepan over medium heat until warm. Remove from heat and stir in the gelatin mixture until fully dissolved. Allow to cool to room temperature.

  4. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.

  5. Gently fold the cooled strawberry mixture into the whipped cream until well combined.

  6. In serving glasses or a cake mold, layer the chocolate cake crumbs and strawberry mousse, starting and ending with the crumbs.

  7. Refrigerate the mousse cake for at least 4 hours or overnight to set.

  8. Once set, remove from the refrigerator and garnish with fresh strawberries and whipped cream before serving.
